Yield: Serves 4 to 6.
2 | envelopes | unflavored gelatin | |

1 1/2 | cups | chicken broth | |

1/2 | cup | mayonnaise | |
|
|||
2 | tablespoons | lemon juice | |
|
|||
2 | cups | Dannon Plain yogurt | |
|
|||
2 | tablespoons | minced onion | |
|
|||
2 | tablespoons | chopped fresh dill | |
|
|||
1 | can | (1-lb.) salmon, drained with skin and bones removed | |
|
|||
2 | cucumbers peeled, chopped and seeds removed | ||
|
|||
Salt to taste | |||
|
|||
Cooked rice or lettuce | |||
|
|||
Garnish: hard boiled eggs | |||
|

|
Stir in gelatin and chicken broth over low heat until gelatin is dissolved. Beat in mayonnaise and lemon juice. Chill until the mixture is thick and syrupy.
Fold in yogurt, dill, onion, cucumbers and salmon. Pour into mold. Chill until set.
Unmold, garnish with hard-boiled eggs, parsley, tomatoes and put on a bed of cooked rice or lettuce.
